Korean spiced pork ribs

Serves 6


  • 1 x 2kg French-trimmed rack of pork ribs
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 onion, finely diced
  • 200g gochujang (Korean red chilli paste), or similar red chilli paste
  • 100g brown sugar
  • 100ml soy sauce
  • 4 tbsp sesame oil

Mix all the ingredients together in the Stellar roasting tray and mix thoroughly to coat the pork ribs in marinade. Cover in clingfilm and refrigerate overnight.

Preheat the oven to 220°C. Remove the clingfilm and roast the ribs for 20 minutes before reducing the temperature to 150°C and cooking for 3 hours, basting occasionally with the roasting juices.

Remove from the oven and rest for 20 minutes. Serve with steamed rice, kimchi and whole gem lettuce leaves.
