Lucy Bee’s Eggs in Blankets With Coriander

Try Lucy Bee’s take on the traditional ‘pigs in blankets’ for a deliciously healthy start to the day. These little muffins are surprisingly easy to make – making them ideal for a weekend or weekday breakfast.

Serves 9

Ingredients
1 tsp Lucy Bee coconut oil
9 slices of streaky bacon
6 medium eggs
30g/1oz fresh coriander (cilantro), chopped
Pinch of Lucy Bee Himalayan salt and ground black pepper

Method
1 Preheat the oven to 180C/350F/gas mark 4. Grease 9 cups of a deep cupcake tray with the coconut oil.
2 Stick one slice of bacon onto the inside of each cup.
3 Crack the eggs into a mixing jug and add the coriander (cilantro) and some seasoning. Whisk well and pour into each cup, to come around halfway up each one.
4 Bake in the oven for 16–18 minutes, or until a knife inserted into the middle of one of the muffins comes out dry.
