Try Novikov’s Autumn Masterclasses


Following a short summer break, Marco Torri, head chef at Novikov’s Italian Restaurant, will resume his ever-popular monthly masterclasses.

Held once again on the last Saturday of each month, there’s something on this autumn curriculum to suit every interest.  Relive memories of sun kissed holidays on 30th September with a trip to Piedmont. When it comes to food, this is a region of Italy like no other, replete with rich flavours, indulgent desserts and full-bodied wines.

Marco’s menu is suitably rustic yet refined, featuring one of Piedmont’s most iconic dishes, vitello tonnato, together with other local favourites like potato gnocchi with cheese fondue, braised beef with red wine and baci di dama (“lady’s kisses”), decadent chocolate-hazelnut sandwich cookies.

Can’t tell your bigoli from your fedelini? Italy is home to thousands of types of pasta, in an extraordinary variety of sizes and shapes, but nothing quite compares to the tender, silky texture and rich flavour of fresh pasta. On 28th October Marco and his team will be showcasing some of the most celebrated, from orecchiette with fresh tomatoes & cacioricotta and tagliatelle with veal ragout through to gnocchi with artichokes & caprino cheese.

25th November might be a month before the big day, but there’s no such thing as being too early when it comes to planning your Christmas fare. The final tutorial of the year is all about letting go of the turkey baster in favour of some of Italy’s best loved seasonal – and regional – specials.

On the menu are such delights as tortellini in brodo, a traditional Yuletide dish from Bologna and Modena; Christmas Eve staple deep fried salted cod and bollito misto, a hearty winter dish from the north featuring meats simmered in a succulent broth, all rounded off by some softly delicious panettone from Milan.

Price: £75 per head to include breakfast, tuition and an informal lunch paired with wine. Remember too that guests who only join for lunch need to pay only £25 to tuck into the fruits of everyone’s labours.
