HomeBakingBeyond Food Foundation’s Mini Christmas Pudding Petit Fours Mini and mouth-watering, these creative canapés are ideal for impressing party guests this Christmas. Makes 24 Ingredients For the puddings: 110g dark chocolate 100g butter 2 tbsp golden syrup 215g plain Digestives, blitzed to crumbs in a food processor 50g currants To decorate: 4-5 tbsp icing sugar, mixed with water to form a thick paste 12 glace cherries, cut in half 48 slivers of candied angelica Method 1 Melt the chocolate, butter and golden syrup in a saucepan over a very low heat, stirring occasionally with a wooden spoon. Do not let the mixture boil. Once combined, add the biscuits and currants and stir well. Remove from the heat and allow to cool. 2 Form the cooled mixture into small balls (approx 15g). Place in petit four cases and decorate with a dab of icing, half a glace cherry and two slivers of angelica, to look like a Christmas pud. Recipe courtesy of Beyond Food Foundation.
